Easy Breakfasts to Start Your Day Off Right

 
 

Breakfast – they say it’s the most important meal of the day. But, some people find themselves so rushed in the mornings that they don’t have time to make breakfast for themselves. Going through the drive-thru can cause costs to add up quickly, but thankfully there’s a better solution. There are so many breakfast dishes you can make in a pinch that can also be stored in the refrigerator throughout the week so that you only have to grab, reheat, and enjoy.
Here are a few examples of quick and easy breakfasts that you can make to give yourself energy to get through the day:

  • Egg “muffins” – Simply beat six eggs, ½ cup of milk, and any chopped veggies or shredded cheese you’d like to add in a large bowl. Pour the mixture into a greased muffin pan and bake at 350° F for 5 minutes. These muffins stay good in the fridge for up to four days.
  • Greek yogurt popsicles – Combine vanilla Greek yogurt and your favorite fruits in a blender. Pour the mixture into an ice tray, paper cups, or a popsicle mold, add popsicle sticks, and freeze overnight. In the morning, you’ll have plenty of protein-rich popsicles to enjoy throughout the week.
  • Multigrain cereal – Combine two tablespoons each of oats, bulgur, and barley in a large microwave-safe bowl with ¾ cup of water. Microwave for two minutes and stir in two tbsp. of raisins and a sprinkle of cinnamon. Microwave for three more minutes, top with walnuts, and pour in some milk for a quick breakfast that essentially cooks itself as you finish getting ready.
