Over the summer, chances are you’d rather be outside enjoying the sunshine rather than cooking in your apartment. And, once you return to your apartment at One 51 Place, it can be helpful to have some easy recipes on hand to whip up the perfect summer snack.

For some food inspiration, check out these quick and easy summer snack recipes:

• Fruit dip – Mix 8 oz. of softened cream cheese with 7 oz. of marshmallow fluff and the juice from one orange. Beat until smooth and blended. Serve with fruit like strawberries and grapes, or other snacks such as graham crackers and pretzels.
• Frozen watermelon popsicles – Cut a seedless watermelon into ¾-inch thick slices, cut off the rind, and cut each slice into three triangles. Insert one popsicle stick into each piece and place on a cookie sheet in the freezer for three to four hours. Be sure the pieces aren’t touching one another or they will freeze together.
• Strawberry banana quesadillas – Start with two tortillas. Spread peanut butter on one and strawberry jam on the other. Slice enough strawberries and bananas to cover one tortilla, and place the peanut butter or jam side of the other tortilla face down on the fruit-covered tortilla. Cook two or three minutes on each side in a pan over medium heat. Enjoy!
