This tasty breakfast treat just requires a little bit of prep work, which will be a small price to pay for the days of delicious breakfasts that they will provide. Here are the ingredients you’ll need to get started:
- 1 cup almond flour
- ¼ cup coconut flour
- ½ teaspoon salt
- 1 teaspoon baking soda
- 3 large eggs
- 3 tablespoons maple syrup
- ¼ cup melted ghee (clarified butter)
- 1 teaspoon vanilla
- ¼ cup unsweetened almond milk
- Pieces of sausage links or blueberries (optional)
To prepare the muffins, preheat your oven to 350 degrees and spray a muffin pan with nonstick cooking spray. Combine all of the dry ingredients in a bowl and mix well. Then, add the eggs, ghee, almond milk, maple syrup, and vanilla. If you are adding in additional ingredients like sausage pieces or blueberries, mix in those as well. Scoop the mixture into the muffin pan and bake for 25-27 minutes.
