- 1 lb of cubed steak meat
- 1 tbsp of vegetable oil
- 1 onion, thinly sliced
- 6 oz of tomato paste
- 14 oz of beef broth
- 1 cup of chopped carrots
- 3 potatoes, cubed
- 1 tsp of dried thyme
- 1 bay leaf
- 1 sprig of fresh rosemary
- ½ teaspoon of crushed red pepper flakes
- Salt and pepper
- 10 oz of button mushrooms, quartered
- 10 oz of green peas, thawed (if bought frozen)
To prepare the beef stew, heat the vegetable oil in a large pot over medium-high heat. Season the meat with salt and pepper, making sure to embed the spices into the surface of the beef. Then sauté the beef in the oil for 10 minutes, or until brown on all sides. Remove the meat from the pot and set aside.
Add the onion slices and tomato paste to the pot and sauté over medium heat for five minutes, remembering to stir often. Return the meat to the pot along with the beef broth, combining them with the onion and tomato mixture already inside. Reduce the heat to low and cover the pot, letting it simmer for 1 to 1½ hours, or until the beef is tender.
Add the carrots, potatoes, rosemary, thyme, bay leaf, and crushed red pepper flakes and let simmer for another 45 minutes. If the stew seems too thick, add water as necessary. For the last step, add the mushrooms and peas and allow to heat for another 15 minutes or so.
