Even if you’re short on time, there are a variety of delicious, easy recipes that you can whip up in as little as 35 minutes.
Try making the following satisfying, simple dinner dishes in the luxurious kitchen of one of our apartments in Alachua, Florida:
- Chickpea salad – Combine one can of drained chickpeas, three sliced tomatoes, chopped basil, sea salt, black pepper, ¼ cup of olive oil, ¼ cup of feta cheese, and one tablespoon of lemon juice. Toss and serve with toasted pita bread.
- Shrimp and linguine – Bring a pot of water to a boil and add one box of dry linguine pasta. When the pasta has about three minutes of cook time remaining, add one bunch of chopped broccoli and one pound of peeled, deveined shrimp. Once everything is cooked, drain and toss with lime juice, peanut oil, soy sauce, shallots, and rice vinegar.
- Potato-crusted fish – Dip white fish filets in buttermilk, then coat with instant potato flakes. Sprinkle with salt and pepper to taste before sautéing fish in butter in a non-stick pan for three to four minutes on each side.
- Chicken and white beans – Combine one can of white cannellini beans, one chopped red pepper, a few pinches of thyme and oregano, one clove of chopped garlic, one tablespoon of olive oil, and ½ teaspoon of salt. Pour mixture into casserole dish. Rub four boneless, skinless chicken breathe mixture in the casserole dish. Bake for 35 minutes at 425 degrees.
